Pimento cheese BLT sandwich is a tangy and tasty way to fancy up the plain old BLT sandwich. This version of pimento cheese uses cream cheese as well as mayo to make it thick and luxurious.
I don’t know about luxurious… But the pimento cheese in this sandwich is so good!

Next weekend is The Kentucky Derby.
As with most “sporting” events, I only care about the food which goes with said “sporting” event.
Kentucky Derby has mint juleps, hot brown sandwiches, pecan pie, little cucumber sandwiches, and of course pimento cheese.
Now some of the true Southerners may take issue with the fact that this pimento cheese isn’t solely mayo based.
I wanted a twist to the traditional pimento cheese for this pimento cheese BLT sandwich.
I also know that a lot of people find mayo gross.
People pleaser, much?
Pimento cheese ingredients:
- Drained diced pimentos
- Mayo
- Cream cheese
- Worcestershire sauce
- Grated sharp cheddar
- Smoked Paprika
- Salt & pepper
The cream cheese thickens the pimento cheese up and makes it not get lost in the sandwich in my opinion.
All the other ingredients for the pimento cheese BLT sandwich are par for the course.
BLT sandwich ingredients:
- Cooked bacon
- Lettuce
- Sliced tomatoes
- A little mayo
- Bread
Make the pimento cheese as a dip with chips or crackers if you desire.
Use the leftovers to make sandwiches.

Pimento Cheese BLT Sandwich
A BLT on toasted bread with a thick and creamy pimento cheese made from a mix of cheddar, cream cheese, mayo, and pimentos.
Ingredients
- For the Pimento Cheese:
- 8oz Grated Sharp Cheddar Cheese
- 4oz Jar Diced Pimentos, drained
- 3 tbsp Mayonnaise
- 2 oz Softened cream cheese
- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Sandwiches:
- Pimento Cheese
- 1 head romaine lettuce
- 2-3 tomatoes, sliced
- 12 oz Center Cut Bacon
- 1/4 cup Mayonnaise
- 8 slices of bread
Instructions
- Preheat the oven to 375 degrees F. Line a large baking sheet with foil. Arrange the bacon in one layer. Bake the bacon for 12-15 minutes until crispy.
- While the bacon bakes, combine the pimento cheese ingredients in a medium mixing bowl. Use a spoon to mix everything together. Store in the fridge in a sealed container until ready to use.
- Toast the slices of bread. Spread a little mayo on one half of the sandwich. Spread a few heaping tbsp of pimento cheese on the other slice. Arrange bacon, tomato, and lettuce on top of the mayo slice. Cover with pimento slice. Cut in half and then eat!
Notes
Pimento cheese is also very good as a dip with crackers, chips, or cut veggies.
